Shiraz

Viticulture practice:

Trellised to 2.4m. Controlled irrigation. Green dropping
at 50% variation to ensure even ripeness at harvest time.
Winter pruning.

Time of Harvest:

March 2005
Vinification Details:

Healthy, optimum ripened, hand harvest grapes, are
selected. By working with gravity and as close to a natural
process as possible with the least harm to the skins and
the pips, we ensure the flavours stay intact. While fermenting
the whole berries, the wine is pumped over every 4 hours to extract as much flavour and colour as possible. The wine is
then kept on the skins for another three weeks before the free
run juice gets separated from the berries which are then pressed. After malolactic fermentation we decide to blend the pressed juice with the free run, or keep it separate.

Winemakers Comments:

A dense, deep ruby-red wine with a lovely, youthful varietals fruit bouquet with a nice soft spicy mulberry
palate. Soft tannins balanced with a full mouth feel, obtained from a soft approach during the winemaking process. By decanting this wine, an unparallel experience of flavors are released. A wine truly reflecting the passion with which it was created.
