Chenin Blanc 2006

Harvest:

Early in the morning to make sure that we catch all beautiful
flavours in the juice that we use for this excellent blend.
All the grapes are hand picked – destemed and not crushed.

Fermentation:

14days at 12-14°C- Using only imported yeast for fermentation
Bottling:

We give the wine a fining of bentonite to help with stabilization of
the wine (protein)- Cool down to - 4°C for cold stabilization
(Tartrat) – filtration- bottling.

Tasting:

Spring-fresh floral and peach tones, Sweet melon - Good balance
between the alk&Ta – Full body wine with just enough RS to keep
the Ta in balance
